Jamaican Dry Rub Chicken


  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1/4 cup brown sugar
  • 1 tsp nutmeg
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin

Coat baking sheet/oven safe pan with olive oil and preheat oven to 375. Mix all of the spices and the sugar together. Evenly coat both sides of the chicken breast with the spice mixture. Bake for 30-40 minutes.

Pineapple Mushroom CousCous


  • Far East Veggie CousCous or plain couscous (2-3 cups cooked)
  • 1 small container sliced white mushrooms
  • 1/2 cup finely chopped fresh pineapple
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • Crushed red pepper flakes to taste
  • 1 tsp garlic powder
  • 1/4 cup chopped fresh parsley

Prepare desired couscous (Far East: follow box directions. Plain couscous: Boil desired amount according to package). In a separate pan sauté mushrooms in the olive oil until soft with the black pepper, red pepper flakes, and garlic powder. Next add the pineapple and cook until mushrooms begin to brown. Turn off the heat and add the fresh parsley.

**You can add the mushroom/pineapple mixture to the couscous or eat it as a side.
