One- Pot Spicy Veggie Soup


  • 2 bags Trader Joes shredded green cabbage
  • 1 bag of Trader Joes frozen tri color pepper strips
  • 1/2 bag frozen green beans chopped
  • 1/2 bag baby carrots chopped
  • 1 large sweet onion chopped
  • 5 stalks of celery chopped
  • 6 cloves of garlic (or 2tbps chopped garlic)
  • 1 14.5oz can crushed tomatoes
  • 32 oz vegetable broth
  • 1 14.5oz can of chicken broth
  • 2 tbsp olive oil
  • 24oz of your favorite tomato sauce
  • 1 tsp black pepper
  • 1 tsp cayenne pepper (optional)
  • 1 tsp paprika or smoked paprika
  • 1 tsp garlic powder
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp crushed red pepper flakes

In a large pot, add the olive oil and slightly brown the chopped onion and garlic. Add the celery, carrot, pepper, and green beans (yes, these can go right in frozen) and stir continuously until the veggies are slightly softened. Next, add the veggie broth, chicken broth, tomato sauce, crushed tomatoes, and all of the spices (black pepper, cayenne pepper, paprika, garlic powder, pepper flakes, basil and oregano). Cook until the soup is heated through. Finally add the cabbage until it is cooked down enough for your soup to resemble soup (you’ll see what I mean). Remove from heat and serve or save it for the next day!

Disclaimer: Exact measurements may be off slightly due to the fact that I threw everything in the first time I made this. The cayenne pepper adds just enough heat for the spicy food lovers of the world but it is completely optional along with all of the other ingredients listed. No, you do not HAVE to use Trader Joes products but who doesn’t love a reason to go shop there (plus, they sell shredded cabbage so it is one less thing to cut). Not sure exactly how much this makes: approximately six 2 cup servings.
